About the Turkeys: The Winter Family has been raising turkeys on their Alberta farm in Dalemead, south east of Calgary, for four generations. Winter’s Turkeys are humanely raised with total consideration for their comfort and well-being. They are regularly provided with clean and unlimited access to fresh water and the outdoors. Winter’s Turkeys are provided a whole grain diet that is supplemented with organic greens and forage. Their total diet is 65% whole grain and as a finishing ration they are fed 90% whole grain. Winter’s Farm raises primarily hens that finish in about 18 weeks. This feed program produces an excellent finish and a naturally self-basting turkey with a delicious flavour.

Winter’s Farm Free Range Turkey – Deposit

Deposits will be credited toward the $4.79/lb price of each turkey. Based on past years’ turkeys, the average weight will be 15-20lbs. per turkey (average total cost will be $70 – $90). We will have some that are a bit smaller and some a bit larger. We will try to accommodate size requests on a first-come, first-serve basis determined by your position on the reservation list as available (please comment size preference in NOTES section at checkout).

Winter’s Organic Orlopp Turkey – Deposit

This French cheese from the Champagne-Ardenne region has an ivory paste and a washed, orange rind. Adding Champagne right into the Langres brings out its natural flavours and turns the night into an event! Serves 6-10 people.

TO SERVE

  1.  Unwrap cheese, leaving wooden band on. Let rest at room temperature for 60-90 min
  2. With a skewer, puncture 7-8 holes in top of cheese and rest an additional 20 min
  3. Pour 1/4 – 1/2 bottle of Champagne over cheese and rest for an additional 20 min
  4. Remove wooden band, and serve with sliced baguette & flutes of Champagne. Enjoy!
